The problem with that particular venue of explanation, is that it suddenly ignores the 'infinite possibilities' that choices create. Jack saving the little sisters is just one possibility in the 'multiverse', it is by no means THE definitive possibility (especially since bioshock 1 gives you the option of harvesiting the little sisters rather than saving them).

Burial at Sea/Infinite does it well by expressing it through the public (as at this point they are all still believers), but Bioshock 1 does it through Andrew Ryan and the setting. This is true, however, a silent protagonist could only work in Bioshock 1. You are supposed to characterize Jack.

An attempt to fully understand Burial at Sea. My theory. SPOILERS. So I have a theory of Burial at Sea. Being able to understand all of this requires full understanding of Bioshock Infinite's plot and the way the game's multiverses work, so I'm not explaining everything as exhaustively as I could. The Fontaine/Atlas character arch got pretty much fucked up in Burial at Sea. Like you said, Fontaine/Atlas was acting more of a delusional thug than being the smooth, intellectual con man he was depicted in BioShock 1. Also to quickly point out, BaS pretty much made the whole con man character switch to Atlas useless. It's never explained why there are constants and variables, there just are. It tries to explain parts of how dimension-hopping works, and when it hits a dead end it pulls the "constants and variables" card. It just feels like a cop-out. It's like telling someone an interesting tale and then suddenly ending it with a deus ex machina.
It looks like other people have covered your questions, but having played Infinite first myself, you might want to now look into the Burial at Sea DLC!
